Triple Chocolate Banana Bread



Super Easy One bowl triple chocolate banana bread. 
Loaded with Chocolate chips.


Its been a busy month for me I hardly had time to bake, I had a plenty of ideas in my mind, but time is just too short.

Yesterday, while I am cleaning the fridge, I found out we got again plenty of overripe banana. I actually put them in freezer most of time to save for smoothies or those days that I wanted a banana bread. I found out today that the portion of our freezer were I put my frozen fruits are so full and I can hardly open it. Its about time to use them. 

Since lately I am over tired at work, I only want to make something that is easy, and also easy to clean up, that is why I love banana bread they are so easy to make plus they are very tasty. Banana bread can eaten for breakfast, afternoon snack or even dessert. This triple banana bread falls into dessert. 


I wanted to make something special not the usual banana bread. Since I am going to visit my lolo/lola friends I want to make something for them as well. 

If you are reading my blog for a while I pay visit in a nursing once a month. 

For this triple chocolate banana bread I swapped some flour to cocoa powder and added some espresso powder. Adding espresso powder will intensify the flavour, you cant actually taste the coffee flavour, but it really add the richness of the chocolatey flavour.






Here is the recipe:

Ingredients:

1 cup all purpose flour, sifted
1/2 cup dutch processed cocoa powder, sifted
1 tsp baking soda
1/2 tsp salt
1 tbsp espresso powder
3/4 cup light brown sugar
1 tsp vanilla extract
1 egg
1 cup mashed banana from 2 large bananas
3/4 cup vegetable oil
1 cup chocolate chips

Procedure:

  1. Preheat your oven to 350 F. Grease and line the bottom with parchment paper of 9'' x 5'' loaf pan. And set aside.
  2. In a small bowl, whisk all your dry ingredients, flour, cocoa powder, baking soda, salt and espresso powder. 
  3. In a meduim bowl, whisk together sugar, mashed banana, vanilla extract, vegetable oil, and egg.
  4. Add the dry ingredients to the wet ingredients and mix until just combined: Fold in the chocolate chips mix until evenly distributed. 
  5. Transfer the batter to a prepared pan. Bake for 55-65 minutes or until a toothpick inserted comes out clean. 
  6. Cool in pan on a wire rack for 10 minutes and turn out, cool completely on a wire rack. 
  7. Enjoy.
