Coconut Tapioca Mini Cookies

Coconut Tapioca Mini Cookies

Few days ago I was diagnosed with gluten intolerance, and makes my life up side down. I feel like I have nothing to eat. Aside from being gluten intolerance my skin test and blood test shows that I also got watermelon and strawberry intolerance. Watermelon is one of my favorite I can eat it all day long, and now I have to avoid it. Life is full of surprises.

I got home that day so broken hearted, and sudden change of diet is really tough but I really needed to do it. So I spend hours and hours to research what are the gluten free foods. I came across with a tapioca starch. Oh by the way gluten is found in wheat, barley and rye. Imagine I am not able to enjoy my french toast in the morning, or my favorite treats. How sad your life can be? Until I discover these. Have you seen that photo above? Looks yummy right. These cookies have crumbly texture the same as meringue cookies, but when you chew they turn into a creamy coconutty that melts in your mouth!

Recipe inspired by Hot Thai Kitchen.

2. Remove the pandan leaf and let it cool until its lukewarm and then stir the egg yolk.
