Monggo Guisado is a most famous dish in Philippines that uses Mung Beans as a main ingredients. The original version uses meat, seafood and vegetable to compliment the taste of the mung bean. There is a tradition in Philippines that monggo guisado is served on Fridays. Dahil indi masarap ang monggo pag indi Biyernes. ( Monggo Guisado doesnt taste good if it is not Friday.) So I made this for my Filipino Friday themed day. Im always excited about Fridays aside from I dont have to get up early the next day,and because its a Filipino Friday I get a chance to catch up on my Filipino movies and get to eat filipino food. 
I made Monggo Guisado without a meat. Yes you read it right. It taste like an authentic monggo guisado. 

Here is the recipe:

Ingredients:

2 cups of mung bean, soaked for couple of hours
1 medium brown onion
4 gloves minced garlic
1 diced tomato
1 1/2 cup of sliced shiitake mushroom
handful of spinach
salt to taste
pepper to taste
1 tablespoon soy sauce
1 cup of vegetable broth 
3 cups of water for boiling

Procedure: 
  1. In a pan, put in the water and bring to boil.
  2. Put in the Mung bean and simmer until soft (30 mins)
  3. On a separate pan, saute the onion, garlic and tomato.
  4. Add the shiitake mushroom and cook for few minutes until soft.
  5. Pour in the cooked mung bean,  vegetable broth, soy sauce and salt and pepper stir and simmer for 10 minutes. 
  6. Sprinkle the spinach.
  7. Serve hot.
