Monggo Guisado is a most famous dish in Philippines that uses Mung Beans as a main ingredients. The original version uses meat, seafood and vegetable to compliment the taste of the mung bean. There is a tradition in Philippines that monggo guisado is served on Fridays. Dahil indi masarap ang monggo pag indi Biyernes. ( Monggo Guisado doesnt taste good if it is not Friday.) So I made this for my Filipino Friday themed day. Im always excited about Fridays aside from I dont have to get up early the next day,and because its a Filipino Friday I get a chance to catch up on my Filipino movies and get to eat filipino food.
I made Monggo Guisado without a meat. Yes you read it right. It taste like an authentic monggo guisado.
Here is the recipe:
Ingredients:
2 cups of mung bean, soaked for couple of hours
1 medium brown onion
4 gloves minced garlic
1 diced tomato
1 1/2 cup of sliced shiitake mushroom
handful of spinach
salt to taste
pepper to taste
1 tablespoon soy sauce
1 cup of vegetable broth
3 cups of water for boiling
Procedure:
- In a pan, put in the water and bring to boil.
- Put in the Mung bean and simmer until soft (30 mins)
- On a separate pan, saute the onion, garlic and tomato.
- Add the shiitake mushroom and cook for few minutes until soft.
- Pour in the cooked mung bean, vegetable broth, soy sauce and salt and pepper stir and simmer for 10 minutes.
- Sprinkle the spinach.
- Serve hot.
