Tofu Scramble


I feel like breakfast is not breakfast without an egg. But when I decided to become more plant based eater, I search for an alternative on how to still enjoy breakfast. You wont be able to put your fork down, but that's ok! This recipe is completely will make your day, simple and healthy. The tofu scramble is bursting with addictive savory sweet taste made of kale and capsicum.

Here is the recipe:

Ingredients:

1/2 block of firm tofu
1/2 -1 tbsp olive oil
1/4 red onion
1/2 red capsicum thinly sliced
2 cups kale loosely chopped

Sauce
1/2 tsp salt
1/2 tsp garlic powder
1/2 tsp cumin powder
1/2 tsp chili powder
water to thin

Procedure:

1. Pat the tofu dry with absorbent towel.
2. While the tofu is draining, Prepare the veggies. Heat the pan over medium heat, once hot add the olive oil, add the red onion and capsicum. Season with  salt and pepper and cook until softened.
3. Add kale, season with salt and pepper and cook for 2 minutes.
4. Unwrapped the tofu, use fork to break the tofu into chunks. Use spatula to move the veggies on the one side of the pan and add the tofu. Saute for few minutes and add the sauce, pour mostly on the tofu and and less over the veggies. Stir to distribute the sauce evenly and continue cooking until the tofu had browned.
5. Serve hot.

I add up some roasted potatoes. You can serve it with toast or a fruit. Enjoy!
