Lately, Im into a themed day in preparing meals. Meal planning is so much fun and made it a bit easier. Most of the time I prepare two sets of meal everyday my partner loves his curry a lot he cant last a day without a curry, and me oh well rice is life. Im a Filipino and a meal is not a meal without a rice. but lately I change my diet, I try to eat more healthy and try to decrease my rice intake. So I ended up making meal planning, and because I am in inter cultural relationship its hard to do meal planning that meet our preferences half way. My partner can only eat chicken and me I try to avoid meat as much as I could, not a strict vegan but Im trying. For this year we decided we will have our packed lunch most of the weekdays. We agreed that lunches would be more on vegetarian. We always look some vegan "meat" in the grocery. I always look what is on special as meat substitute is a bit pricey. Last week we shopped at coles and we found out that coles sells more vegetarian options. And we found this minced quorn for just $3.50. And its perfect I can make a taco filling with that.
Here is the taco filling recipe to try:
Ingredients:
1 large brown onion, sliced
1 cup quorn minced
1 canned four beans, drained and rinsed
1 pack of taco seasoning you like.

1 cucumber
1 tomato
ice berg lettuce
Procedure:
1. In medium heat, saute the onion until brown. Add the quorn and saute for about 4-5 minutes or until soft, add the four beans and let it cook for bout 3 minutes, add the taco seasoning, stir and let it cook for a minute or two.
2. Heat up the taco according to the packaging.
3. Assemble. Put some of the filling and top with your desired vegetables. You may put some salsa and grated cheese.
