Cranberry White Chocolate Oatmeal Cookie

Easy, Soft and Chewy Oatmeal cookie that is perfect treat for Holidays.

Its nine days before Christmas. Yay! But I woke up a bit unwell today, its been so hot here is Sydney. I am just seating in the couch and munching this cookie. At first I was hesitant to share these but when I was eating it today. OMG! They are bomb! I was hesitant to share because the photo I took I wasn't satisfied but as the saying goes dont just the way they look. The photo doesnt give a justice. 

The cookies where soft and chewy. And they are jam packed with with so many goodies. You cam mix in some nuts for a little something extra.  And they are so easy to make. Trust me this cookie are perfect for holidays!


Here is the recipe for you to try:

Ingredients:
1 cup all purpose flour
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/2 cup unsalted butter, softened to room temperature
1/2 cup light brown sugar
1/4 cup granulated sugar
1 large egg, room temperature
1 teaspoon vanilla extract
1 and 1/2 cup old fashioned oats (not quick oats)
3/4 cup dried cranberries ( I used less sugar)
3/4 cup white chocolate chips.

Procedure:

  1. In a large bowl, whisk together the flour, baking soda, ground cinnamon and salt. Set it aside.
  2. In the bowl of a stand mixer fitted with paddle attachment or in a large mixing bowl  using a hand held mixer, beat the butter, brow sugar and granulated sugar until smooth. Mix in the egg and then the vanilla, scraping down the sides of the bowl as needed.
  3. Slowly add the flour mixture to the wet ingredients and mix until just well combined. Add the oats, dried cranberries and white chocolate chips and mix until well combined.
  4. Cover the dough and put in the fridge for at least 30 minutes.
  5. Pre heat oven at 350 F. Line two large baking sheets with parchment paper and set aside. 
  6. Using a 1.5 tablespoon cookie scoop. Scoop the cookie dough into the prepared baking sheet. Roll the cookie dough into balls and gently press down with your hand to flatten.
  7. Baked into the preheated oven at 350F for 10-13 minutes. Remove from the oven and allow to cool down in the baking sheets for 5-10 minutes before transferring to a wire rack to cool down completely.



Note: To make these Gluten free I use Bob Mills gluten free all purpose flour and Make use you read the packaging of oats to see to it they are gluten free.
