This eggless vanilla sponge cake is very basic recipe and it doesn't need an egg. The cake has soft, moist and spongy texture.
It is perfect cake for birthday party, you can decorate it however you wanted. You can also double the recipe and make a layered cake. I am sure it will taste the same like as a bakery one.
This recipe is my life saver if I have to made a cake for my friends. I dont have to go around and ask if someone have an egg allergy. Personally I don't really like eating eggs.
Lets talk about the ingredients, I always wanted to make cakes that are easy and simple, that most people have it on hand.
This is super easy to make yet so delicious.
Here is the recipe for you to try.
Ingredients:
- 2 cups of granulated sugar
- 250 g butter, softened to room temperature
- 2 teaspoon vanilla extract
- 4 cups self rising flour
- 2 cups of milk. ( I used almond milk, you can use any milk you want)
- 2 tablespoon white vinegar.
Procedure:
- Preheat the oven to 350 F. Grease and line the bottom with parchment paper of three 8-inch round pan.
- In a bowl of stand mixer ( large bowl using a hand held mixer), beat the sugar and butter until pale in color and creamy. Scraping the sides and bottom if needed. Add the vanilla and mix until just combine.
- Combine milk and the vinegar and set it aside.
- Add the flour alternately with milk to the butter mixture, starting and ending with flour. Scrape the sides and bottom as needed. Beat until all the ingredients is well combine. Do not over mix.
- Divide the cake mixture into the prepared pan.
- Bake for 20-25 minutes, or until a skewer inserted comes out clean.
- Remove from the oven and allow the cake to cool down completely. Remove from the pan and decorate however you want.

Notes:
You can bake the cake ahead, cooled and wrap with a cling wrap and put in the freezer. Defrost before you decorate.
Cake can be bake in one pan, but you need to adjust the cooking time.
