Its already middle of the week. I came back from work today craving for a banana bread. I thought of buying from the supermarket. But then I remembered we got over ripe bananas lying in the kitchen. Because the weather is so warm here in Australia, the banana easily gets rotten. Everyday I've seen them changes color.

Its already middle of the week. I came back from work today craving for a banana bread. I thought of buying from the supermarket. But then I remembered we got over ripe bananas lying in the kitchen. Because the weather is so warm here in Australia, the banana easily gets rotten. Everyday I've seen them changes color.
So today, I thought of making some banana bread before the bananas get completely rotten. I only wanted to make something that is easy. I only want a recipe that I can mix everything in one bowl.
The amount of sugar and banana can vary depending on your taste buds. The original recipe call for 1/2 cup of white sugar but if you want a little bit more sweeter you can do 3/4 cup of sugar. And the secret to its great flavour? The butter!
You don't need a fancy mixer to make this recipe. All you need is a bowl, a fork to whisk the eggs, and a sturdy spoon to mix the batter, And your all set.
You may also add up a chocolate chips and some chopped nuts or raisins. You can also put the batter into a muffin tin and make a muffin instead.
The best bananas to use are those that are over ripped. The peel should be have browned and the banana inside is squishy and browning.
Here is the recipe:
Ingredients:
2 to 3 over ripped bananas, peeled
1/3 cup melted butter
1 teaspoon baking soda
1/8 teaspoon of salt
1/2 cup of sugar (you can use 3/4 cup if you want a little bit more sweeter)
1 large egg, beaten
1 teaspoon vanilla extract
1 1/2 cup all purpose flour.
Procedure:
- Preheat the oven to 350 F, and grease the sides and lined the bottom of parchment paper of a 4x8-inch pan.
- In a mixing bowl, mash the ripe bananas with a fork until completely smooth. Stir in the melted butter into the mashed bananas.
- Mix in the baking soda and salt. Stir in sugar, beaten egg and vanilla extract. Mix in the flour.
- Pour the batter into your prepared loaf pan. Bake for 50 minutes to 1 hour or until the tester inserted comes out clean.
- Remove from the oven and let it cool in the pan for few minutes. Then remove the banana bread from the pan and let it cool completely before serving. Enjoy!
