Can't decide between brownie and a chocolate chips cookie? 
With Brookies you can have them both. Isn't it fun?


Today, I will be sharing to you these yummy and soft, two in one cookie. Yesterday, I was dreaming about brownie but I also like a chocolate chips cookie. But during the holidays I eat a lot of sweets, Im kinda feeling a bit guilty of putting a lot of calories on my body. Do you feel the same way? 
But when your craving is strong you forgot about the calories. The same as when you try the brookies you will keep munching this and count the calories later on. Hahaha.. 

I wish you could see my partner's reaction while eating these. He would keep on asking for more.



One of his favorite is my ube cookies, but he decided yesterday that he had already two favorite the ube cookies and these brookies. He said that brookies are just like a cookie that Subway sells, it crunchy in the outside but soft inside.

So here is the recipe for you.

Ingredients:

Brownie Cookie Batter

 10 tablespoon butter, room temperature
2/3 cup granulated sugar
2/3 cup brown sugar, lightly packed
1 large egg
1 egg yolk (from a large egg)
1 teaspoon vanilla extract
1 1/4 cup all purpose flour
1/2 cup unsweetened cocoa powder
1 teaspoon baking soda
1/4 teaspoon salt


Chocolate Chips Cookie Batter

10 tablespoon butter, room temperature
2/3 cup granulated sugar
2/3 cup brown sugar, lightly packed
1 large egg
1 egg yolk (from a large egg)
1 teaspoon vanilla extract
2 cups all purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1 cup semi sweet chocolate chips.

Procedure:


  1.  For the brownie cookie batter: In a medium bowl with a handheld mixer or in a bowl of stand mixer, beat the butter, granulated sugar, brown sugar together until smooth and creamy, 1-2 minutes. Add the egg, egg yolk, vanilla extract and beat the mixture for 2-3 minutes until light in color.
  2. In a separate bowl, whisk together the flour, cocoa powder and salt. Add the dry ingredients to the batter and mix until well combined. Cover and put in the fridge while making the chocolate chips cookie batter.
  3. For the Chocolate Chips Batter: In a medium bowl with a handheld mixer or in a bowl of a stand mixer, beat the butter, granulated sugar, brown sugar together until smooth and creamy, 1-2 minutes. Add egg, egg yolk, vanilla extract and beat the mixture for 2-3 minutes until light in color. 
  4. In a separate bowl, whisk together the flour, baking soda and salt. Add the dry ingredients to the batter and mix until well combined. Fold in the chocolate chips and mix until well combined. Cover and put in the fridge for 20 minutes
  5. While the dough is resting in the fridge, Preheat the oven to 350 F. Line baking sheets with silpat liners or parchment paper and set aside.
  6. Portion both set of the dough into about 4 dozen equal pieces, I used small teaspoon. 
  7. Grabbing one chocolate chip cookie ball and one brownie ball, press them together and your hands to gently form into a cookie shape, flattening and turning smooth the edges and form a flattish but still thick cookie shape. They will spread out while baking.
  8. Bake the cookies on the prepared baking sheets for 8-10 minutes. Dont overcooked or they will dry and crunchy - under-bake just slightly soft, chewy texture. It is ok if the chocolate side crack just a bit. Remove the cookies from the oven and let it cool in the pan for 1-2 minutes before transferring to a cooling rack to cool down completely.
  9.  Enjoy!



Notes: 
It might be a bit messy to work on with the brownies part. You can put in the fridge until it reaches the rolling consistency. Or you can add 1 tablespoon of flour. Putting it on the fridge works fine with me.
