Cinnamon Roll Cookie


Little cinnamon roll cookies made from a sugar cookie dough.
Its easy and taste like a real cinnamon roll.


There's a funny story why I came across an with this idea. I keep on making a cinnamon roll but something always happened on it, its either the dough didn't rise or it turn out not soft and fluffy. On one time my niece told me that the cinnamon roll is better be called as a cinnamon roll cookie. I never gave up but I guess I better off of buying, that wasting my time and ingredients. 

That was few years ago.

Today, I went to work and passed by a Filipino store, the lady in the shop is a good cook and bakes well. So I bought some cinnamon roll from her. While I am eating it I remember what my niece told me about my cinnamon roll cookie (failed baking!).

The dough is very simple to do. The key is to be patient and wrap it with a cling wrap and put in the fridge for 2 hours. Who's got a patience for that? You have to be patient and plan ahead, you can do laundry, go for a walk, or read a book while the dough is chilling in the fridge. You have to chill as well! :) 


Lastly, you have to cool it down and drizzle the frosting. Don't be like me I started eating it without a frosting. 


Here is the Recipe for you:





Ingredients:
2 1/4 cup all purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
3/4 cup butter, softened in room temperature
3/4 cup granulated sugar
1 large egg at room temperature
2 teaspoon pure vanilla extract

Filling:
2 tablespoon butter melted and slightly cooled
1/4 cup granulated sugar
1 teaspoon ground cinnamon

Icing
1 cup Icing sugar
3 tablespoon milk
1/2 teaspoon vanilla extract


Directions:
  1. Make the dough: Whisk the flour, baking powder, and salt together. Set aside. In a medium bowl using a handheld mixer or a stand mixer with a paddle attachment beat the butter in a high speed for 1 minute until light and creamy. Add in the granulated sugar , egg and vanilla extract and beat on high speed until well combined. Scrape down the sides and bottom if needed. Add the dry ingredients to the wet ingredients and mix on low. If you find the dough is still a bit wet and to messy for rolling, add 1 tablespoon of flour.
  2. Roll out the dough into a rectangle onto a floured parchment paper or baking mat about 1/4 inch thick. Spread 2 tablespoon of butter onto the dough. Mix granulated sugar and cinnamon together and sprinkle over the dough. 
  3. Tightly roll up the dough into a log. Use your finger to seal the cracks. Transfer the rolled dough in a plate or chopping board, and loosely cover with a cling wrap. Put in the fridge atleast 2 hours.
  4. Preheat the oven at 350 F. Line a large baking sheet with a parchment paper.
  5. Remove the log from the fridge cut into 1/2 inch thick slices. Place in the prepared baking sheets.
  6. Bake in the preheated oven of 350 F for about 10-11 minutes until browned on the sides. Allow to cool in the baking sheets for about 5 minutes and transfer to a cooling rack to completely cool down.
  7. Make the Icing: Whisk Icing sugar, milk, and vanilla extract together until smooth. Drizzle it over the cookies.
  8. Enjoy.
