Happy Australia Day!

Today, we started our day so early. We woke up at  4 am, so we can catch our hot air balloon ride at 6 am. When you get once in a lifetime experience you wont want to miss it. Me and partner have a long desire of hot air balloon ride, but they are so expensive. We cant afford to spend $500 for that. So anyways, today's experience was for only $10.

Last night, I made this sweet potato muffin for our breakfast on the go today. We planned to wake up, do our morning routine, start driving, and  have something to eat in the car, just in case the ride wont take on time. 

Since I am making it for breakfast I wanted something that is healthy and the same time filling. I found this potato in the kitchen were I originally planned for sweet potato chips. I'm obsessed with sweet potato this days. They are SO GOOD for your body, they are packed with vitamins, minerals and antioxidants. There are many reasons why you should add sweet potato on your diet. 

These muffins are a lot more flavorful than anything you can at the supermarket. 

I also love the natural orange color. 

Here is the recipe:

Ingredients:

2 cups of traditional rolled oatmeal 
1 cup cooked sweet potato, mashed. ( i used medium size sweet potato)
1 cup of milk
1/2 cup apple sauce
2 eggs
1/2 cup maple syrup (you can use honey if you want)
1/2 tbsp pumpkin spice 
1/2 cup walnuts, chopped

Procedure:

  • Bring a pot of water to boil. Add the peeled sweet potato cooked until tender but firm, about 10 minutes. Drain and mashed.
  • Preheat the oven into 350 C. Line a muffin tray with a muffin liner or just grease with a coconut oil. 
  • In a medium mixing bowl, mix all ingredients and stir until well combined. Divide the mixture into the prepared muffin tray. I put 1/4 cup of mixture in each, it gives me 12 muffins.
  • Bake on the preheated oven of 350 C for 25 minutes.
  • Remove it from the oven, Let it cool in the pan for 2- 3 minutes before transferring to a cooling rack to cool down completely. 
  • Enjoy!
