Brownie + Chocolate Chips Cookie Cake




This is easy, rich, and chewy Brownie and Chocolate Chips Cookie Cake. Perfect cake for you next birthday celebration.


Two days ago I posted the brookies, (brownies and chocolate chips cookie in one). My partner was crazy over it. He is said he become a cookie monster. 

I bring some of it at work and give my co worker, they said it was really good. They called it a lunar cookie. (day and night) 

I woke up a bit late today and I feel a bit lazy I was planning to finish the last few episodes of 13 reasons why. I dont usually watch series, but this one is so interesting. 

My girlfriends message me, and  said they are coming over for some brookies. Seriously! Brookies is worth the drive, I guess. Me and partner had already finished all the cookie, and because they are coming over just because of the cookies, and I dont want to tell them that is was already finished last night. So, I asked them if they can come over later in the day it will give me enough time to bake. Ssshhh.. That's, our secret! 

Since I was running out of time, instead of making it into a small cookie, why dont I make it in one big piece. Thats were the Idea of Brookie Cake came from. 


They described the cake as a bomb. It is crunchy in the outside but soft in the inside. 


It might look a ton of ingredients but they mostly the same in both layers. 

Here is the Recipe:

Ingredients:

Brownie Layer

1/2 cup unsalted butter
8 ounces coarsely chopped semisweet chocolate
3/4 cup granulated sugar
1/4 cup packed light brown sugar
3 large egg, room temperature
1 teaspoon vanilla extract
1/2 cup +2 tablespoon all purpose flour
2 tablespoon unsweetened cocoa poweder
1/4 teaspoon salt

Chocolate Chips Cookie Layer

2 cups all purpose flour
2 teaspoon cornstarch
1 teaspoon baking soda
1/2 teaspoon salt
3/4 cup unsalted butter, softened to room temperature
1/4 cup granulated sugar
3/4 cup packed light brown sugar
1 large egg, room temperature
2 teaspoon vanilla extract
1 and 1/4 cup semi sweet chocolate chips

Procedure:

  1.  Preheat the oven to 350 F. Grease a deep pie pan or use non stick cooking spray. Set aside.
  2. Make the brownie layer:  Melt the butter and the chopped chocolate in a heat proof bowl in the microwave for about 1 and 1/2 minutes. Remove and stir until all the chocolate is melted. Reheat for few second if needed. Allow to cool for 5 minutes before adding the eggs. Whisk in both sugars, egg and vanilla extract. Then whisk in the flour, cocoa powder and salt. Cover and put in the fridge while making the cookie dough.
  3. Make the cookie layer: Whisk the flour, cornstarch, and baking soda, and salt together until well combined. Set aside. In a large bowl using a handheld mixer or stand mixer fitted with a paddle attachment, beat the butter for 2 minutes on a high speed until completely smooth and creamy.  Add the brown sugar and granulated sugar, beat on a medium high speed until light and fluffy. Beat in the eggs and vanilla on high speed. Scrape down the sides and bottom of the bowl as needed. On low speed, slowly mix the dry ingredients into the wet ingredients until well combined then fold in the chocolate chips until evenly distributed.
  4. Take out the brownie layer and press in down the prepared pan. Spread the cookie layer on the top. You can put cookie dough on thr bottom and brownie layer on the which ever way you like. ( I put it back to the fridge for 20 minutes before baking. )
  5. Bake the pie for 45 minutes to an hour, or until a toothpick inserted in the middle comes out mostly clean with a bit most from the brownie layer. (not wet). All ovens are different start checking after 45 minutes. ( I loosely cover the top of the pie with aluminum foil if the edges are browning quickly)
  6. Allow to cool completely in the pan set on the wire rack. 
  7. Decorate as you like. I used a melted hazelnut spread with some mini oreos and chopped honeycomb. ( You can use chocolate buttercream or even topped with ice cream. )
  8. Enjoy!
